Honey Lemon Barbecue Chicken
Ingredients
4 lbs. frying chicken, quartered and skinned
Paprika
Cayenne pepper
1/2 c. lemon juice
1/2 c. honey
1 1/2 tbsp. sesame seeds
Instructions
Season chicken lightly with paprika and cayenne pepper. Mix lemon juice and honey and set aside. Place seasoned chicken on broiler rack. Broil 4-5 inches from heat for 15 minutes basting occasionally. Turn pieces over and broil 15 minutes longer, basting occasionally. Combine sesame seeds and 3 tablespoons of honey and lemon mix. Spoon over chicken prior to serving. May be cooked on grill.
Honey Baked Beans
Ingredients
2 cups dried beans
6-8 slices bacon
1 tsp. ginger
1 tbsp. chopped onion
1/2 cup honey
1 tsp. salt
1 tsp. dry mustard
Instructions
Soak washed beans in 4 cups warm water for 3 hours. Cook on low heat in tightly covered saucepan 1 1/4 hours; do not allow to boil. Drain beans, save water. Place bacon in bottom of bean pot and add beans. Cover with mixture made of the bean water, honey, onion, ginger, salt, and mustard. Add boiling water, if needed. Place small pieces of bacon on top, cover pot, and bake in slow oven about 6 hours. Uncover bean pot during last hour of baking. If the beans become too dry, add a little water.
Honey Cornbread
Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1 cup milk
1/2 cup butter, melted
1/4 cup honey
Instructions
Preheat oven to 400*F (205*C). Grease an 8-inch square baking pan; set aside. Combine dry ingredients in large mixing bowl. Blend together eggs, milk, butter and honey; add to the dry ingredients, stirring until just moistened. Pour into prepared baking pan. Bake for 30 minutes or until tested done if center springs back after being pressed lightly. Serve warm.
